White wine, 100% Sauvignon - Appellation Touraine Contrôlée..
Created from grapes produced by organic cultivation certified ECOCERT SAS F.32600
Terroir : Sansuette and Toucheronde hillsides‘ heights. Soil: siliceous clay, rich in flint, warming rapidly which give full ripeness to the grapes.
Harvesting : by hand, to keep the fruit undamaged until the press. Selection of grapes with high ripeness.
Vinification : the whole grapes are delicately pressed in order to preserve their qualities. Then, with obtained juice, we use cold settling process by simple natural decantation. Juice is kept in contact with the lees for 4 days to enrich its texture. Fermentation takes place naturally (without addition of yeast) in barrels for 6 months approximately. This is followed by 12 months’ maturing in the same barrels.
Character : limpid colour, yellow with gold hues. Intense and complex nose. Notes of ripe fruits. Firstly, we can smell white fruits (baked pear), candied citrus and floral aromas (lily of the valley, acacia). Then, dried fruits (nutty), bun, honey notes. The mouth presents sweetness. This wine offers an interesting length. The aromatic persistence is good with white fruits, then dried fruits and finally, a vanilla touch.
Tasting : Serve cool between 10° and 12°C. “Idem” makes an excellent aperitif and is also a fine companion to a white meat cooking with cream.
Keeping qualities : 6 to 8 years.
Osmose - Gamme "Incontournable".
Red wine, 100% Malbec (Côt) - Appellation Touraine Contrôlée..

Terroir :First slope of Toucheronde with due south exposure. Soil: siliceous clay with various stones which assures a fast soil’s warming up.
Harvesting: by hand, to keep the fruit undamaged until the press. Selection of grapes with high ripeness.
Récolte : Manuelle avec une sélection et trie des raisins présentant des qualités de grande maturité.
Vinification : Destalked grapes are delicately inserted in opened barrels (225 liters). Vatting time is important (38 days) with daily punching of the cap in the beginning of fermentation and a regular temperature kept between 25°C and 28°C. Malolactic fermentation takes place in the same barrels. This is followed by 12 months‘maturing in the same barrels.
Character : the colour is crimson with purple hues. The nose is rich and concentrated. It expresses strength and ripeness with spicy aromas, black fleshy and jammy fruits in perfect osmosis with grilled and roasted overtones. The mouth is generous, powerful and racy. It confirms our olfactory impressions. This wine is dense, complex with an interesting tannic sensation.
Tasting : erve between 16°C and 18° C. “Osmose” is a fine companion to a red meat cooked with sauce, games, strong cheese.
Keeping qualities: good aging capacity..

Sweet white wine, 100 % Chenin Blanc - Appellation Touraine Contrôlée.

Terroir : First slope of Toucheronde.
The soil is made up of windblown sand over argilo-calcareous formations.
Harvesting : By hand, with sorting and selection grape by grape.
Vinification : The grapes undergo long pressing to extract remarkably fine juice.
Fermentation takes place slowly, over the space of a year, and is followed by 6 months’ maturing in vats.
Character : Straw yellow in colour, with hints of gold. The nose combines seductive aromas of candied fruits, dried figs, honey and quince. A rich and concentrated palate of exceptional fullness. The wine’s remarkable and refreshing balance of sweetness and acidity is a true delight.
Tasting : Served at between 8 and 10°C, "Dédicace" is a remarkable wine. It makes a fine aperitif, and also goes perfectly with foie gras.
Keeping qualities : 20 years and over.
Sparkling white wine, 40% Chenin Blanc, 20% Chardonnay, 40% Cabernet franc.

Terroir : La Bocagerie plateau and first slope of Toucheronde.
The soil is made up of windblown sands over argilo-calcareous formations.
Harvesting : y hand.
Vinification : After ‘assemblage’ (blending) and drawing off, the second fermentation takes place in bottles shelved in tuffeau cellars for a minimum period of 18 months, producing an elegant sparkling wine with delicate bubbles.
When their time in the cellars is done, the bottles are turned on wooden stands.
After the bottles have been degorged, a secret liquid ingredient is added and corks are put in.
Character : Brilliant in colour, with a fine mousse. Refined nose with aromas of fresh fruits (peaches). A creamy and highly refreshing attack on the palate, followed by complex and delicate hints of fruitiness.
Tasting : serve at 8° C. “Crémant de Loire” makes an excellent aperitif and is also a good companion with the dessert.
Keeping qualities : 2 years .
