Terroir : A unique piece of land on the edge of La Retraite woods, enjoying a remarkable microclimate with excellent thermal yield. The eroded sandy soil, with its rich variety of siliceous gravels, is a true marvel.
Harvesting : By hand. Selection and sorting of very ripe grapes.
Vinification : The grapes are pressed whole very delicately in order to preserve their qualities. Juice obtained is cold cleaned by simple natural decantation and left in contact with pomace for 4 days to enrich its texture.
Fermentation is a lengthy process (2 months), taking place naturally (without addition of yeast) at a regulated temperature of 17°C, and is followed by 4 months of maturation on regularly circulated lees.
Character : Straw yellow in colour with hints of gold. Very complex nose, with a concerto of notes of very ripe candied fruits (apricots, pineapples and mangoes).
A rounded palate and long finish, enveloped by a wealth of fruity and jammy aromas.
Tasting : Served cold, at between 10 and 12°C, "Confidence" makes an excellent aperitif, and is also a fine companion to scallops, foie gras, or dessert.
Keeping qualities : From 6 to 8 years.
Red wine, 80% Malbec (Côt) and 20% Cabernet Franc.

Terroir : First slope of Toucheronde with due south exposure.
Eroded siliceous soil with richly varied stone content (flint, perrons, spongestone, etc.) ensuring the environment’s rapid heating.
Harvesting : By hand. Once at the wine shed, grapes are stemmed and placed carefully in vats.
Vinification : In order to produce a rich, concentrated texture, fermentation is a lengthy process (taking from 35 to 40 days), with daily crushing during early stages and regulated temperatures between 25 and 28°C. After malolactic fermentation, maturing in vats takes from 18 to 24 months.
Character : Purple in colour with hints of mauve. Rich, concentrated nose expressing power and maturity through aromas of spices and conserved fleshy black fruits. A generous, thoroughbred and powerful palate, confirming our olfactory impressions. The whole is dense and complex, with a fine, well enveloped tannic weave.
Tasting : Served at between 16 and 18°C, ‘Privilège’ goes perfectly with sauced red meats, game, and strong cheeses.
Keeping qualities : Good aging capacity.
